Technical sheet:
Aging: 11 months on its lees in stainless steel tanks at controlled temperature.
Varietal: 100% Hondarrabi Zuri.
Climate: The 2019 vintage has been the warmest and earliest vintage in our history, with rainfall below normal but consistent with our area. The health of the grapes was exceptional with sugar levels similar to those of other years and with the characteristic freshness of our wines. It will be an unforgettable vintage and worthy of follow-up over the years since it supposed an atypical climate in our area but with wines very attached to the land.
Vineyard: 15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level.
Soil: Soil undulating topography formed by shale, laminated slate and granite.
Winemaking: Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with own yeasts.

Tasting notes
·Visual: Bright, crystal clear, with pale greenish yellow an lemony sparkle.
·Nose: Intense clear notes of fruit and minerals, with subtle hints of white flower and fruits like apple and winter pear, with a salted background that binds it to the Cantabrian.
·Palate: Its large volume in the mouth makes it a round and glyceric wine but with the fresh and Atlantic character of the txakolis. Its acidity makes it an ideal wine to store and enjoy with aging in the bottle for at least 10 years.
