Aging: 6 months on its lees in stainless steel tanks at controlled temperature.
Varietal: 100% Hondarrabi Zuri.
Climate: The 2012 growing season in Aia was characterized by a dry winter and cool spring with average rainfall. The warm dry summer delayed the ripening of the grapes until mid October. The result was exceptional.
Vineyard: 15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level.
Winemaking: Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with own yeasts.
