A cold and humid summer slowed the ripening grapes until late October, resulting in a reduced quantity of grape available.Vineyard: 15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level.Soil: Soil undulating topography formed by shale, laminated slate and granite.Winemaking: Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with own yeasts.Winemaker: Lauren Rosillo
