Technical sheet: Aging: 8 months on its lees in stainless steel tanks at controlled temperature. Varietal: 100% Hondarrabi Zuri. Climate: The 2013 was characterized by a cold and rainy winter followed by high spring rainfall. A cold and humid summer slowed the ripening grapes until late October, resulting in a reduced quantity of grape available. Vineyard: 15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level. Soil: Soil undulating topography formed by shale, laminated slate and granite. Winemaking: Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with own yeasts. Winemaker: Lauren Rosillo
