Kaiaren 2016 limited edition.
2016 was a year with great thermal contrasts and it was possible to reach a slow but exceptional ripening in October. These characteristics together with the experience of knowing the great aging capacity of the vintages of K5 in the bottle and the incorporation of a second generation eager to innovate, make the winery decide to bet and trust in separating a small part of the production to make a unique and unrepeatable wine.
After 48 months of aging on its fine lees, once verified its excellence it is decided to bottle (March 2021) and after having matured 24 months in the bottle, the team of Bodega K5 decided to release to the market.
This monovarietal wine from Hondarrabi Zuri, from the 2016 vintage, has been made exclusively from free-run juice and after a cold pre-fermentative maceration, it has fermented with indigenous yeasts at controlled temperature in stainless steel tank.
It is a limited edition of 6739 bottles.
The great particularity of this wine it is the long aging time (48 months on its fine lees and the rest in the bottle from March 2021), which together with the so characteristic acidity of the variety, becomes a wine with great potential aging capacity.
At Bodega K5 we have managed to ensure that a Txakoli is not just a wine to be consumed in the same year of the vintage, in fact, we have managed to improve the product over the years.
