Technical sheet:
Varietal: 100% Hondarrabi Zuri.
Climate: The 2023vintage has been an unforgettable vintage in our area and has been characterized by a typically rainy winter, followed by a warmer than normal and very rainy spring, which substantially reduced flowering and vigor increased remarkably. The warm summer led us to an earlier harvest than usual and with a very healthy fruit rich in sugars, aromas and flavors. 2019 will be, once again, one of our legendary and unforgettable vintages.
Vineyard: 15 hectares of 100% Hondarribi-Zuri grape varietal planted on trellis framework at some 300m. above sea level.
Soil: Soil undulating topography formed by shale, laminated slate and granite.
Winemaking: Manual selection of the grapes, a cold pre-fermentation maceration period, and then fermentation in small stainless steel tanks with own yeasts.
Aging: 5 months on its lees in stainless steel tanks at controlled temperature.
Winemaker: Lauren Rosillo
Tasting notes
·Visual: Bright, crystal clear, with pale greenish yellow an lemony sparkle.
·Nose: Intense clear notes of fruit and minerals, with subtle hints of white flower and fruits like apple and winter pear.
·Palate: Its great mouthfeel makes it a round, satiny wine without losing the cool Atlantic character found in classic Txakolinas.
